Apple Watch SE is the correct first Watch. Most people want glanceable messages, a timer in the kitchen, and a close-enough activity tracker. They do not need titanium or every sensor on the spec page.
If you do not wear the SE for three weeks, you would not have worn the Ultra either. Start here. Upgrade later only if you hit a missing feature you can name.
No iPhone means no Watch. That rule has not changed. Android users should look at Garmin or Fitbit in this same roundup.
